When I was asked to review this cookbook, I had no idea who Celine Steen was so naturally I was pretty curious about her and checked out her blog, cutely named Have Cake Will Travel. All I gotta say is WOOOOOOOOOOOOW!!!! Seriously…if you want to see vegan food-porn, go to that page! Where do I start??? I first wanted to open up this post by talking in great detail about how last year my dear friend Zoe and I left for an extended weekend to New York City and despite all the vegan eating that took place, we met soooooo many amazing people in the NYC vegan community, including Michael Suchman who is one half of the power couple that is Vegan Mos (Sadly, Ethan Ciment was out of town…). However, talking about that trip would take eternity and you would get bored before you ever got to the recipe and the giveaway…hahaha!
This breakfast is not going to help you lose weight…I am not even going to claim that it is remotely healthy. But I can assure you that this is totally vegan and you are gonna win over everyone and anyone when you serve them this red beauty on a plate. This recipe uses a few convenience ingredients for the sake of ease and for those moments where you simply cannot fuss with a bunch of steps and grabbing a bunch of ingredients that you may or may not have. During the weekends in my household we make a nice breakfast that goes beyond the typical weekday fare but we are juggling 3 kids who wake up at the buttcrack of dawn and will steal a random loaf of bread and destroy it if we don’t give them food right away. So needless to say, this breakfast checks all the boxes for us.
